Panjiri: A Special Pakistani Sweet
Panjiri is a special Pakistani sweet, particularly made during the winter season. It is delicious in taste and rich in nutrients.
Ingredients:
Ghee – 1 cup
Wheat Flour – 1 cup
Sugar – 1 cup (or to taste)
Almonds – 10-12 pieces (chopped)
Pistachios – 10-12 pieces (chopped)
Raisins – 2-3 tablespoons
Fennel Seeds – 1 tablespoon
Cardamom – 4-5 pods (ground)
Yogurt – 1 tablespoon (optional)
Milk – ½ cup (optional)
Black Pepper – ¼ teaspoon (optional)
Rose Water – a few drops (optional)
Method:
Roasting the Flour: First, heat ghee in a pan. Once the ghee melts, add the wheat flour and roast it over medium heat while stirring gently with a spoon. Roast the flour thoroughly until it turns golden and starts releasing a pleasant aroma.
Adding Sugar and Other Ingredients: Once the flour is properly roasted, add the sugar. After the sugar melts, add the fennel seeds, ground cardamom, almonds, pistachios, raisins, and black pepper. Mix everything well.
Using Yogurt and Milk: If you're using yogurt and milk, you can add them at this stage. Milk helps enhance the sweetness and texture of the panjiri.
Rose Water: Finally, add a few drops of rose water to enhance the fragrance.
Letting the Panjiri Cool: Once all the ingredients are well mixed, set the panjiri aside to cool.
Eating with Milk: For an added boost of nutrition, you can mix 2-3 tablespoons of panjiri with milk and consume it. It is excellent for strengthening bones and overall health, particularly for alleviating back pain, joint pain, and other bone-related issues. I had joint pain and back issues, and my herbalist recommended this. After I started eating it, I noticed a significant improvement, and I still continue to eat it for its health benefits.
This sweet is not only delicious but also a great source of energy, especially in winter!
