Simplified Apple Strudel

Introduction:

Hello, I’m excited to share with you a simplified version of the classic Apple Strudel, courtesy of America's Test Kitchen. With this recipe, we’ve taken the essence of the traditional strudel and made it more accessible for home cooks without compromising the taste or the flaky texture. Enjoy the aromas of baked apples and cinnamon as you pull this delicious dessert from your oven.

Ingredients:

- 1 3/4 pounds Golden Delicious apples, peeled, cored, and cut into 1/2-inch pieces

- 3 tablespoons white sugar

- 1/2 teaspoon lemon zest

- 1 1/2 teaspoons lemon juice

- 1/4 teaspoon ground cinnamon

- 1/4 teaspoon ground ginger

- 1/8 teaspoon table salt

- 3 tablespoons golden raisins (optional)

- 1 1/2 tablespoons panko breadcrumbs

- 7 tablespoons unsalted butter, melted, with an additional 1/8 teaspoon of salt mixed in

- 1 package store-bought filo dough, thawed

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Equipment:

- Microwave

- Kitchen knife

- Baking sheet

- Parchment paper

Instructions:

1. Prep the apples by peeling, coring, and cutting them into half-inch pieces. Place them in a microwave-safe bowl.

2. To the apples, add the white sugar, lemon zest, lemon juice, ground cinnamon, ground ginger, and table salt. Stir until well combined.

3. Microwave the apple mixture for 2 minutes, stopping to stir halfway through. Let the apples sit covered for 5 minutes after microwaving to complete par cooking.

4. Drain the apples to remove excess juice and set both apples and juice aside.

5. To the apple mixture, add the golden raisins (if using) and panko breadcrumbs, stirring to combine.

6. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

7. Unroll the filo dough and cover with a damp towel to prevent drying out.

8. Take one sheet of filo dough and place it on the baking sheet. Brush lightly with the melted salted butter.

9. Repeat layering and buttering the filo until you've used half the package.

10. Spread the apple mixture along the long edge of the dough, leaving a 2-inch border at the edge and ends.

11. Gently roll the strudel, using the parchment paper to help lift and roll the dough around the filling.

12. Brush the top with more melted butter, then bake for about 30 minutes, or until the strudel is golden brown and the filling is bubbly.

13. Let the strudel cool for a few minutes before slicing. Serve warm or at room temperature.

Cooking Tip:

When working with filo dough, keep the sheets that you are not currently using covered with a damp cloth to prevent them from drying out and becoming brittle.
