Steemit Sandwich Contest Week#78 - Chickpea & Quinoa Falafel & Salad Pita Pockets

Falafel made with chickpeas, not only is an excellent source of protein, high in complex carbohydrates and soluble fiber, but also contain tons of nutrients like calcium, iron, magnesium, phosphorus, potassium, zinc, copper, manganese, vitamin C, thiamine, pantothenic acid, vitamin B, and folate.Source

There has been much debate about the origin of Falafel, it is believed to have originated in Egypt about 1000 years ago and was invented by the Coptic Christians who ate this as a meat replacement during Lent. Some claim that it dates back to Pharaonic Egypt. India has laid claim to being the original home of Falafels; it’s also eaten by Muslims during Ramadan and on the other side of the battle lines it's considered a national food of Israel!

Before a war breaks out about the origin, we will not take sides but one thing is for sure that despite our differences, these delicious little nutty balls are enjoyed by people all over the world, in wraps, salad, in meze platters and even in sandwiches!

I will be serving delicious Chickpea & Quinoa Falafel & Salad Pita Pockets with a peppery & minty Coconut Yogurt dressing.

INGREDIENTS

  • Chickpea & Quinoa Falafels baked not fried
  • Brown Pita Bread
  • Red, Yellow & Green Bell Peppers cubed
  • Spring Onions diced
  • Cucumber diced
  • Lettuce chopped
  • Cayenne Chili diced

Dressing

  • Vegan Coconut Yogurt
  • fresh Mint diced
  • 1/2 Cayenne Chili diced
  • Lemon Juice & Rind
  • Salt & Black Pepper
    Mix all together in a mortar & pestle

And we're ready to rock & roll...but I really don't think those ancient Egyptians would be happy to hear us doing that:

Mix salad ingredients with dressing and pop into warmed Pita bread halves.

Pop the Falafels into Pita pockets and we're all done!

Simple but delicious sandwich, perfect for a light lunch.
