What we have here, folks, is a carefully-controlled sprout on a russet potato variety called "Goldrush". By allowing the potato to rest inside a cabinet rigged with a low-powered light source, the sprouts continue to grow and begin to develop some unique characteristics, such as pubescence and anthocyanin (red/blue/violet pigment found in plants) development.
Next time you're about to toss out your older spuds because of a few sprouts, maybe save one and do some experimenting. Potatoes are a lot more interesting than just french fries and 'tater chips, y'all. :)
