Colour Challenge - Monday Red

image.jpegThis is the very red tomato and basil sauce I make each season, always enough for an entire winter ahead. I just cut up the tomatoes from the garden, add big handfuls of basil, also from the garden, and roast it all in the oven. It's absolutely delicious.
