Maybe not the healthiest option with marshmallow topping, but you can't have sweet potato pie without marshmallows.
Doctor says no gluten for a few more days, so I came up with this tasty gluten free recipe.
What You'll Need
1 Lb Ground Turkey
1 cup rehydrated cranberries
1 Tbsp Corn Starch
2 tsp salt
1 tsp pepper
1 tsp nutmeg
1 Tbsp Parsely
1 Tbsp Garlic
1/2 cup celery finely chopped
1/2 cup onions finely chopped
1 cup corn Pops
1 cup Chicken Broth
and of course, sweet potatoes (yams)
Bake yams at 325 for 45 minutes then mash
Cook Turkey, Spices, Vegetables and Cranberries
Add Chicken Stock and Corn Pops
Reduce Stock then cover with sweet potatoes
Arrange marshmallows on top and bake at 400 to brown marshmallows
The corn starch will thicken and the Pops will dissolve to create a gravy so that the whole meal is a thanksgiving dinner in one pot.
