MINI PIES WITH SWEET POTATO TOPS

This is perfect for midweek meals – easy and tasty – no fuss and packed with nutrition.
INGREDIENTS
4 cups of sweet potato – diced
1 brown onion – chopped
2 teaspoons of olive oil
1 carrot – chopped
1 zucchini – chopped
3 cups of lean beef mince
1 can of tomatoes – diced salad to serve
METHOD
Preheat oven to 390F.
Cook your potato until tender.
Mash till smooth and put to the side – keep the lid on.
In a saucepan, over a medium flame, cook zucchini, carrot, and onion.
Cook until tender and then add mince.
Cook until browned.
Pour in tomatoes and mix well.
Lower the flame and simmer until thick.
Spoon into 4 ovenproof ramekins.
Place mashed potato on top.
Into the oven and bake until golden.
Serve them up with salad.
