This cake is from an era, where things were hard, financially wise. Suprise, surprise...it's very moist and tasty!
2 1/2 cups all-purpose flour
1 1/4 cups sugar
1 1/4 cups water
1/2 cup vegetable oil
1/3 cup cocoa powder
1 1/2 teaspoons vanilla essence
1/4 teaspoon salt
1 1/2 teaspoons baking powder
For the frosting:
2 1/2 cups powdered sugar
1 cup cocoa powder
1/3 cup water
1/4 cup (1/2 stick) unsalted butter, room temperature
1 tsp vanilla essence
Lightly grease two 9-inch cake pans with butter or non-stick spray and put aside. Preheat oven to 375º
Whisk all the dry ingredients in a large bowl, then blend in other ingredients
Pour mixture evenly into greased cake pans.
Place in oven and bake for 24-26 minutes or until done.
For Frosting: Blend together powdered sugar, cocoa powder, and salt, if using, in a large bowl or mixer.
Add water, softened butter and vanilla extract, and beat together until smooth and creamy.
Frost cake after it has cooled down
