Ya que resido en una zona ganadera, consumo leche de vaca recién ordeñada, pues es más barata, es mucho mejor en comparación con la que viene en polvo o con la pasteurizada. Obviamente, yo esterilizo esta leche antes de consumirla, pues es necesario, además de extraerle la grasa; sin embargo, para hacer tortas, siempre me gusta utilizar algo de la parte grasa que le he retirado al esterilizarla, pues le da más cuerpo y mejor sabor a las tortas. A continuación les dejo mi post en donde explico el proceso para esterilizar y extraer el contenido graso de la leche de ordeño.

Obviously, I sterilize this milk before consuming it, as it is necessary, in addition to extracting the fat; However, to make cakes, I always like to use some of the fat that I have removed when sterilizing it, as it gives more body and better flavor to the cakes. 60-80 ml de aceite vegetal neutro, puede ser de soya o maíz. Si utilizas leche de ordeño, empleas 60 ml, si utilizas otro tipo de leche, emplearás 80 ml.
200 gr de azúcar blanca.
3 huevos.
300 gr de harina de trigo con leudante, cernida.
½ cucharadita de vainilla. Si no tienes vainilla puedes utilizar ralladura de limón o de naranja.
500 ml de leche. Si utilizas la leche de ordeño, como ya indiqué previamente, debe estar esterilizada, y es idóneo para esta preparación, que le dejes parte de su contenido graso.
- Moldes para hornear aceitados y enharinados, un bol y una paleta de madera para mezclar, y las tazas medidoras.
60-80 ml of neutral vegetable oil, it can be soy or corn. If you use milking milk, you will use 60 ml, if you use another type of milk, you will use 80 ml.
200 gr of white sugar.
3 eggs.
300 gr of self-rising wheat flour, sifted.
½ teaspoon vanilla. If you don't have vanilla, you can use lemon or orange zest.
500 ml of milk. If you use milking milk, as I indicated previously, it must be sterilized, and it is ideal for this preparation, that you leave part of its fat content.
- Oiled and floured baking pans, a mixing bowl and wooden paddle, and measuring cups.
Then I add the eggs little by little one by one and mix it. When the mixture is homogeneous, I slowly add half of the flour, while mixing.
Then I take the milk which, as you can see in the photo, has a certain amount of fat on the surface, and I add it little by little to the mixture. Before this step they can dissolve the vanilla in the milk; I did it when I was halfway there, but the ideal is to do it before. I keep mixing to homogenize. Then I finish adding the remaining flour to the mixture, avoiding any lumps. I let it rest covered, for an hour, so that it rests and activates the leavening principles of the flour, in this way the cakes will grow more. Once this time has elapsed I serve them in the greased and floured molds, I bake at 180 ºC for 1 hour, I verify that they are cooked by inserting a knife in the center of them; and ready! I take them out of the oven, wait for them to cool down, remove the mold and eat! Enjoy your meal!
