You will be needing;
Banga (palm fruit)
assorted meat
mackerel
Sliced onions
pumpkin(optional)
seasoning cubes
sliced Scent leave
Dried fish
Half cup of ground Crayfish
Dried pepper to taste
Salt to taste
Steps
- Soak dried fish in hot water to remove sand and dirt. Wash thoroughly.
- Chop onion and scent leaves, set aside.
- Cook palm fruits (banga fruits) for 30-50 minutes, then pound in a mortar and pestle.
- Mix pounded palm fruit with water, then squeeze out the thick paste.
- Parboil meat and mackerel until tender, then season with stock cubes, salt, and sliced onions. Remove the fish after 10 minutes.
- Add the squeezed-out palm fruit juice to the boiling meat.
- Add the dried fish and blended crayfish to the pot and simmer for 10 minutes.
- Add spices (onga soup sachet and/or seasoning cube) to taste.
- Stir in chopped scent leaves, sliced onions, salt, and pepper.
- Add the pre cooked mackerel fish (whole) to preserve their shape.
- Cover and cook for 1 minute.
- Add chopped Ugu (optional) and simmer for 3 minutes.
Your Banga stew is ready, this is also called ofe akwu in Nigeria .
