BOILED PORK SOUP (NILAGANG BABOY)

Cooking is not expertise but since I love to learn new things and ideas, I research and read articles about cooking simple Filipino dishes during this time of pandemic and to relieve boredom during ECQ (Enhanced Community Quarantine) because of COVID 19.

Today, I will introduce you my own version of Boiled Pork Soup. Filipinos called it as NILAGANG BABOY or NILAT-ANG BABOY in Cebuano. This soup dish is commonly served during lunch or dinner eaten with steamed white rice and it’s best served with soy sauce with calamasi and chilli.

This time, I use ribs of the pig instead of belly or shoulder part that are commonly use. As you can see, the pork is so tender that it will voluntarily separate the lean from its bone. I let the pork boiled separately for about 45 minutes to an hour and I set aside the water to use as pork broth soup. I rather also put maiz (corn) Instead of banana (saba) to have a Bulalo (Beef Broth Soup) taste. I love as well to put a lot of leafy vegetables like cabbage.

So, if you really want to try cooking try my own version of NILAGANG BABOY, below are the ingredients and simple steps to prepare. I hope that my version can help you and You can get ideas from it. Have fun and enjoy cooking.

Ingredients:

2 lbs. pork ribs (cubed belly or shoulder, can be)
1 medium onion (cut half)
1 whole medium cabbage (quartered cut)
2 medium potatoes (peeled and cubed cit)
5 pcs. yellow corn (cut)
1 pork broth cube
1 teaspoon whole peppercorn
1 teaspoon of salt
3 tablespoons cooking oil
water

Instructions:

(Boil the pork separately for 45 minutes to an hour. Make it sure that the pork is already tender and let it cool. Set aside the water from the boiled pork and use it as your pork broth soup.)

  1. Heat the cooking oil in a deep cooking pot.
  2. Once the oil becomes hot, saute the onion and add
    the whole pepper corn. Continue to cook for 20 seconds.
  3. Put-in the pork. Cook until the color turns light brown (about 3 to 5 minutes).
  4. Pour-in the pork broth. (You may add more water if necessary). Bring to a boil. Simmer for 20 minutes or until the pork becomes tender totally.
  5. Add the corn potatoes. Stir and cook for 12 minutes.
  6. Put-in the cabbage. Add salt to taste. Stir. Cover and continue to cook for 3 minutes.
  7. Transfer to a serving bowl.
  8. Serve with a spicy fish sauce dipping sauce.
  9. Share and enjoy!
