Eggplant is one of the must-have fruits in your homestead. Very often people are confusing it with a vegetable, but be assured Eggplant is a fruit. So why is it a must have?
It is very popular in: North America, Australia and New Zealand, Europe (East and West), India, South Asia, South Africa, Russia, pretty much all around the world. It means that there is a huge variety of different Eggplant recipes: salads, soups, second meals, deserts etc. It is also considered a great substitute to the meat and therefore very often used by vegans and vegetarians. You can cook it however you want and it makes you a very versatile chef. Personally I can list at least 15 to 20 favorite recipes with Eggplant and probably will do that, but in my next posts.
In this post I would like just to share these wonderful photos from my parents farm. As you can see there are two different varieties of Eggplants ( white and diaomond).
At some point we were afraid that hot weather might ruin a harvest, but phewww everything went all right:)
Eggplants rarely disappoint me :)
