Hi guys! We have been cutting down on animal products as much as possible, but I'm still learning, so any tips and recipes are very welcome.
These turned out good enough that I'll make again. I've tried a similar recipe in the past, but it didn't work out, was too crumbly.

However I made a few changes. First of all I made 1/3rd of the recipe for 2 of us. Also I added 1 tbs of corn flour since the mixture was too liquid and a bit of chilli for more taste.
Instead of baking them for 40min, I baked them for 10-15min and then covered in breadcrumbs first using a flour/water batter (instead of an egg). Lastly, I fried the nuggets in hot oil, till golden.
The turned out really crispy outside and a little mushy in center. The nuggets went along great with several dips like vegan tartar & spicy hummus (chickpeas dipped in chickpeas). Next time I'll add cheese inside, since this plant based cheese melts way slower than the dairy ones.
Next time I'll try to remember to charge and use my camera instead of the phone ^^
