Arabian Rice🍱/ KFC Rice💜

Hello, beautiful Hivers, I hope you are fine and healthy wherever you are. Today I am going to share with you a recipe that is loved by everyone everywhere around the world, adults and kids alike. This recipe is called Arabian Rice, or KFC Rice, as the kids in our house call it. This recipe is super easy to make with very simple ingredients, which I bought from my local grocery store. So let's get started.

Ingredients

Chicken stock 470ml

Rice 250g, washed and soaked for ½ an hour

Boiled shredded chicken 250g

Capsicum 100g, julienne chopped

Whole fresh green chillies 3

Cardamom 4

Cloves 4

Salt 1 teaspoon/ to taste

Freshly ground black pepper ½ teaspoon/ to taste

Olive oil 3 tablespoon, you can substitute it with any cooking oil of your choice

Saffron 1 pinch, soaked in 4 tablespoons of water

Cooking Method

Take chicken stock and pour it in a cooking pot. To the chicken stock, add chopped capsicum, boiled and shredded chicken, whole fresh green chilies, cardamom, cloves, salt, freshly ground black pepper, and cooking oil.

On medium-high heat, bring the entire contents of the pot to a boil.

Once the stock starts to boil, add the washed and soaked rice and stir one time gently.

Keep the heat at medium-high for 10 minutes until the stock level reduces to an inch below the level of the rice. When the level of the stock drops to an inch below the level of the rice, reduce the heat to medium-low. Put the lid on and cook for another 20 minutes or until the stock dries out completely. Be careful to avoid over-stirring during the entire cooking process so as not to break the rice.

When the stock dries out completely, reduce the heat to very low. Add saffron water as shown in the picture. Put the lid back on and let it cook for 5 more minutes.

After 5 minutes of cooking, turn the heat off. Use a fork to fluff up the rice. Your Arabian Rice or KFC Rice is ready to serve.
