Hello hive fam welcome to another blog. For todays content I will be sharing here to you one of Cebu's oldest pasalubong center which everyone loves in the north, the Titay's.

Every place around the world has its unique delicacies to offer. In France, they have French Macaroons- it is a soft and flaky-shaped shell cookie with a creamy filling. Moreover, in the United Kingdom (UK), Chocolate Digestive is one of their top-tier cookies that gained popularity all over the world. It is a cookie known for its soft satiny texture flavored with milk and chocolate. However, in the Philippines, we have also a lot of cookies baked in different cities or provinces that have a world-class taste. One of these is the Rosquillos in Liloan, Cebu.

This delicious cookie is made up of eggs, flour, sugar, baking powder, and shortening. Rosquillos cookie is considered by many Filipinos and even foreigners as one of the most delicious snacks especially when paired with coffee or hot chocolate due to its crunchy texture, subtle sweetness, and fine tart. But, behind the success of this delicacy, is the owner's love for baking.

It all started with Margaretta Frasco who is known in the town as "Titay". When Titay starts to bake this golden-colored cookie and sell it to the public; many people drop by her little store to have a taste of this one-of-a-kind delicacy. As time goes by, the number of her customers fluctuates. People from faraway places visit Liloan just to taste this delicious delicacy of Titay. Thus, she baked a bunch of cookies in her "hudnohan" (clay oven) to satisfy the craving of her customers. Due to the popularity gained by her cookie during that time, the news about this delightful cookie in town reached the provincial governor.

However, when the governor visits Titay's store and asks the name of her tasty cookie, Titay is speechless because she doesn't know the name of her appetizing biscuit. It was the governor then who came up with a great name for Titay's good. Since he wore Titay's ringlet-shaped cookie on his fingers that time, he said out of nowhere, "Rosquillos". Thus, the name rosquillos was born.

Today, more than a century ago since the rosquillos were created, Titay's oven continues to bake thousands of rosquillos using an artisan method of baking. The cookie offers a world-class taste that not only satisfies the cravings of Filipinos but also fulfills the foreigners' longing for a delicious cookie.

Consequently, this golden-colored cookie named rosquillos became one of the most famous food souvenirs in the Philippines. Titay's Corporation continues to produce more delightful pastries aside from rosquillos these are torta, ensaimada, penato, and assorted bread. On one hand, to honor the late Margaretta Frasco or Titay and her appetizing cookie as well as the Town's patron (San Fernando El Rey), the Municipality of Liloan considers rosquillos as their official festival, they call it "Rosquillos Festival" which depicts the vibrant history of how is the famous delicacy in liloan (rosquillos) was made. The said festival was celebrated every last week of May to commemorate the founding of Titay's Corporation.

Indeed, rosquillos is not just a simple cookie that offers a world-class taste but it is also part of the vibrant history of the municipality of Liloan. As I tasted the rosquillos for the very first time during my visit to Titay's store, I could say that rosquillos were delicious and had a unique taste compared to other cookies that I have tasted.

Now, I know why people crave Titay's rosquillos because of its one-of-a-kind taste. And if you wonder, what is Titay's secret recipe for her rosquillos? It was her love for baking. The Frasco family believes that no matter how good baker you are, if you don't love what you are doing you cannot produce delightful goodies.
