Hello friends in Vegan community, today I will share our family breakfast recipe. This morning I only provided one breakfast menu, namely stir-fried corn noodles. Even though there is only one menu, I combine corn noodles with Enoki mushrooms and carrots, so that my family's nutritional needs are maintained.
Apart from the main nutritious ingredients, I also use selected spices which enrich the taste of the stir-fried corn noodles. There are garlic, red chilies, Peking onions which are fragrant when fried which will increase your appetite. I also use candlenut, nutmeg, coriander and ground pepper. I also added sliced tomatoes, celery and leeks.
Ingredients
I will cook corn noodles for five servings, the main ingredients I use are 5 pieces of corn noodles, 100 grams of Enoki mushrooms and 100 grams of carrots.
Meanwhile, spices and other additives are :
5 cloves of garlic
1 clove of Peking onion
1 nutmeg
1 candlenut
1 tablespoon coriander
5 red chilies
1 tomato
2 celery leaves
2 leeks
50 mL sweet soy sauce
1 tablespoon of salt
1 teaspoon of sugar
5 tablespoons of cooking oil
1 pack pepper powder
200 mL water
1 L water to soak the corn noodles
Preparation
Corn noodles have a tough texture, that's why we have to soak them in water before cooking the corn noodles. So I will make some preparations before cooking the corn noodles.
1.Soak the corn noodles in water until soft, while waiting for the corn noodles to become soft, I will process the spices.
2.Wash the carrots and cut them long.
3.Remove the base of the brown Enoki mushroom, wash the Enoki mushroom, then cut according to taste.
4.Wash the tomatoes, celery leaves and leeks, then chop roughly
5.Peel the skin of the Peking onion, wash the Peking onion and slice it, I sliced it rather thick.
6.Wash the garlic, candlenut, coriander, nutmeg and red chili, then grind the garlic, candlenut, coriander, nutmeg, red chili, sugar and salt, I still use a pestle and mortar.
7.I will check if the corn noodles are soft, after I check, the corn noodles are soft, to make it easier to cook the corn noodles, I will cut the noodles.
How to cook
1.Heat the cooking oil
2.Sauté the Peking onions until wilted.
3.Add ground spices, sauté until fragrant.
4.Add the Enoki mushroom pieces, then stir until mixed, cook until boiling.
5.Add water, then cook until boiling and reduced water content.
6.After the water content is reduced, then add the carrot pieces, stir until mixed, cook the carrots until wilted.
7.Add the corn noodles, then stir until the noodles are mixed with the other spices.
8.Add sweet soy sauce,then stir until the sweet soy sauce blends with the noodles.
9.Add ground pepper according to taste
10.Then cook the noodles until all the ingredients are mixed well, then add the chopped tomatoes, celery leaves and leeks.
Corn noodles have finished cooking, turn off the stove. For friends who like spicy taste, you can add pieces of cayenne pepper. But because I cooked the corn noodles for the breakfast menu, I didn't add pieces of cayenne pepper.
The result
Stir-fried corn noodles with a combination of Enoki mushrooms and carrots are ready to be enjoyed.
