Lemon rice - simple and . healthy

Greetings Hiveans of the plant power vegans community !!! If you are hungry and waiting for a quick meal. Then why wait ? Go for this meal.

A lunch enjoyed by all generation groups. Here Iam just making the lemon rice for just one person. Let's go for the recipe.

INGREDIENTS REQUIRED :

  • Cooked rice - 1 cup
  • Lemon - 1/2 of one lime
  • Turmeric powder - 1/2 tsp
  • Salt - as per your taste
  • Coconut oil - 1 tbsp
  • Mustard seeds - 1 tsp (optional)
  • Bengal gram (split lentil) - 1 tbsp
  • Ground nuts - 1 tbsp
  • Cashew nuts - 1 tbsp
  • Ginger - 1 tsp chopped
  • Green Chilli - 1 or 2
  • Curry leaves (optional)

PREPARATION METHOD:

STEP - 1

Cook and keep aside one plate of salted rice. Preferably long grain rice.

STEP - 2

Keep a thick bottomed vessel in the cooking gas. Add some cooking oil, splutter mustard seeds, add chopped ginger, green chilli, split gram lentil, Cashewnuts, groundnuts. When the colour changes add rice and switch off the flame.

STEP - 3

Squeeze the lemon juice and to it add turmeric powder. Now pour thi mixture to prepared rice when hot. Add curry leaves and mix it well. Now its almost done. Ready to be eaten. You can have it with pappad and pickle.
