Crispy 'n' sweet rice flakes also called as 'Aval vilayichadhu' in my place

Greetings lovely Hiveans! With a new week ahead, goes a new recipe. Its evening time and not to say, the climate is so pleasant craving for something to eat hot with a cup of tea. So why not have some crunchy and delicious so called 'Aval' in south and 'Poha' in north. Tempting is it...let's go for the recipe.

About the recipe :

A delicious evening snack, enjoyed by all generation and definitely gets along well with a cup of tea. This is called as 'Aval vilayichadhu' in my place. I know its difficult to pronounce, but this is what it is called here

Preparation time: Hardly 10 minutes
INGREDIENTS REQUIRED:

  • Rice flakes - 1 cup
  • Jaggery - 3/4 cup
  • Water - 1/4 cup to dissolve jaggery
  • Grated Coconut - 3/4 cup
  • Sliced Coconut - 1/4 cup
  • Coconut oil - 1 table spoon
  • Cardamom powder - 1 tsp

NOTE : Same cup should be used for measurement of all the ingredients.

METHOD OF PREPARATION :

STEP - 1

Rice flakes

Firstly, keep all the required ingredients ready. I preferred brown flakes to white ones, as they are healthy. Usually, it is told that jaggery has mud particles in it. So just boil water and jaggery and let it dissolve in watery form and keep it aside. The remnants remain underneath if their is any.

Keep a non stick pan, heat a spoon of coconut oil and to it add sesame seeds. When it turns brown remove it and keep aside. Next add coconut slices and saute until it turn light brown in colour. Once crispy, remove from flame and keep aside.

STEP - 3

In the same pan, strain and add the boiled jaggery water until it becomes a one string consistency. That is the perfect texture for adding grated coconut. Keep stirring it , until the coconut absorbs the whole jaggery. Once this process is over, add the rice flakes and mix all over for 3 minutes, so that the sweetness is evenly done. Switch off the flame. Immediately add the fried sesame seed, fried coconut slices and cardamom powder for flavour.

This is called one string consistency

If the ingredients and texture are followed as mentioned you get an excellent crispy flakes. Enjoy with a hot cup of tea, preferably in the evening.
