Beans Carrot combo- an easy to cook side dish with riceo

Greetings hiveans!! Hope the week is going on in full swing to all Hiveans. Fine, so Iam here with another Bean-Carrot recipe, an easy to cook and a perfect side dish for rice. Right from my childhood I have been eating this. My mom's special and tasty recipe.

INGREDIENTS REQUIRED

  • Beans - 250 gm
  • Carrot - 200 gm
  • Onion - 1 medium size
  • Green Chilli - 1 or 2 (as per your spice)
  • Salt - as per your taste

For Coconut mixture

  • Coconut - 1/2 of one medium size coconut
  • Cumin- 1/2 tsp
  • Chilli powder - 1/2 tsp
  • Turmeric powder - 1/4 tso
  • Garlic - 2 cloves
  • Curry leaves - one hand full

For spluttering

  • Coconut oil - 2 tsp
  • Mustard seed - 1 tsp
  • Curry leaves - one hand full

METHOD OF PREPARATION

TIME TAKEN: 7 to 8 minutes.

STEP - 1

Clean and wash thoroughly the carrot, beans, onion and green chilli in water. Add a few turmeric to it. Rinse well in one or two water and place them in a strainer, just for 5 minutes.

STEP - 2

Cut the beans, carrot, onion and chili into very small pieces and keep aside.

STEP - 3

In the mean time, grate coconut. To it , add cumin seeds, two cloves, chilli powder, turmeric powder and finally curry leaves. Now, coarsely grind them and keep aside.

STEP - 4 (Cooking process)

Finally, take a deep thick bottomed vessel and place it on a medium flame. To it, pour some oil, add mustard seeds, curry leaves, sliced onions and saute it for a minute or two. Now add the vegetables, salt and saute them for 5 minutes. Keep the lid closed. Inbetween saute, inorder to avoid burns. After 7 to 8 minutes, add the coarsely grinded coconut and stir well continuously for another 3 minutes. Your veggie is ready to be served with hot rice.
