Chicken Noodles and Dumpling Noodles Know the Difference to Become an Alternative

Get to know Chicken Noodles

  1. Seasoning

The seasoning for chicken noodles tends to be sweeter. To make the seasoning for this chicken noodle topping, Mama needs a combination of shallots, garlic, turmeric, ginger, candlenuts and a little coriander.

Apart from spices for topping chicken noodles, Mama needs spices for making chicken oil. The use of chicken oil is what differentiates it from wonton noodles.

It is called chicken noodles because the ingredients needed are chicken fat and skin, garlic and a sufficient amount of vegetable oil.

  1. How to make chicken noodles:

To make delicious chicken noodles, Mama needs to make broth. The method is to boil water and chicken along with chicken bones over low heat. Also add salt and pepper to add a savory taste to the broth. Set aside this broth for chicken noodle soup.

When the broth is ready, drain the boiled chicken, cut into cubes. Meanwhile, for the topping, Mama sauteed the ground spices until fragrant. Add the diced chicken and stir until the spices are absorbed.

Usually, for chicken noodles you will also add a little sweet soy sauce (so it's like chicken soy sauce) to add flavor to your taste.

Dumplings actually tend to be salty and savory. Apart from that, wonton noodles rely more on the savory taste of the broth – not chicken oil.

To make broth, of course you need 2 liters of chicken stock, finely chopped garlic, salt, pepper and green onions.

This chicken stock is obtained by boiling chicken over low heat, cooked for quite a long time.

Meanwhile, for the topping, these wonton noodles use chopped chicken, seasoned with garlic, a little ginger, soy sauce and a little sesame oil to strengthen the taste and aroma.

To make wonton noodle soup, saute the crushed garlic and ginger until fragrant. After that, add the chopped spring onions. Add the sauteed spices to the broth. Add sugar, salt and AJI-NO-MOTO®. Test the taste and continue to heat the broth until it boils.

How to make wonton noodle topping, saute the crushed garlic until fragrant. Put the chopped chicken in a food processor. Cook over very low heat, stirring continuously until the chicken forms grains. Set aside the chicken noodles to serve with wonton noodles later.

In a bowl, arrange the lettuce then add the boiled egg noodles. Top with dry chicken, serve with fried dumplings and pickles. Serve the broth and meatballs in separate bowls. So it doesn't change the texture of the wonton noodles.
