A White Christmas After All & Some Christmas Breakfast

Just five days ago the weatherman predicted Christmas day to be warm with a high close to 50 degrees fahrenheit (10 degrees Celsius)and a low not far off from that. Yesterday it rained all day long but this morning the temperature dipped below freezing bringing some snow.

These were some photographs I took out of my front windows of my house early this morning around 8:00 a.m. Not a large accumulation of snow but the car is lightly covered so is the gr
ound, streets and sidewalks. As I was witnessing the light white dusting of snow I spotted a squirrel. It looked like it was foraging for something. Not long after he was accompanied by another squirrel. Maybe the first squirrel found something and drew the attention of the other.

I wanted to do something different for breakfast this day. I decided to make a bacon, egg, and cheese egg casserole. Above is the bowl I mixed the ingredients in while the bacon was in the oven.

The initial bowl (I added to it later) contained the following:

  • 12 Eggs
  • 2 cups of shredded Colby Jack cheese
  • 2 cups of sour cream
  • 1/4 cup of milk
  • Salt & Pepper for taste

I beat the eggs up by themselves first with a fork. Than added everything else and whisked everything together. I did this as the bacon was in the oven at 400 degrees Fahrenheit (205 degrees Celsius) for about 17 minutes. Bacon turned out nice and crisp. I used a whole package of bacon which contained 10 or 12 slices.

Once bacon cooled, I cut it up with a pair food shears into bite size pieces and placed in bowl. I also used a paper towel to dap bacon to get excess grease off. I kept 6 cooked half slices and put off to the side for use later. I also added some cut up mushrooms (4 ounces). The next step is to grease a 13 inch by 9 inch dish and than dump the mixed bowl into it. Before putting in the oven I made sure the bacon and mushrooms were evenly distributed in the dish.

The egg casserole goes in the oven at 350 degrees fahrenheit(approximately 180 degrees celsius)for about 45 minutes. At the 35 minute mark I pull it out and place those 6 half slices of bacon on the top with a dusting more of cheese. Its a decorative thing but comes in handy if you make several different egg casseroles (sausage or ham) which I have done when we have company. It just lets your guest know what meat is inside.

While the egg casserole is in the oven I fried up some potato slices. Easy to do I just melted some butter and added salt & pepper for taste. I actually did two batches and it took about 20 minutes per batch with the stove top on medium heat. I sped up the process a bit by covering the frying pan with aluminum foil. Crispy on the outside and soft on the inside. Hey a good cook has to do a taste test right?

Here is the finished egg casserole. I can't wait to put on my plate and devour it 😋 There is one last thing to go in the oven yet. So I cover this dish with aluminum foil to keep it warm.

Oh yes, need a breakfast treat, right? What better than some cinnamon rolls, hehe. Nothing to hard here, they were pre-made in a sealed roll. Just have to grease a pie dish, place rolls in them, and off to the oven. Cook time was 17 minutes at 400 degrees fahrenheit (205 degrees Celsius).

While waiting on the cinnamon rolls I finished with other things. I dished out some canned fruit, made some toast, and cleaned the preparation dishes. Towards the end I put the plates together.

Cinnamon rolls are done, oh the smell while they were cooking and when I pulled them out my taste buds were racing. I let them sit for a few minutes before I drizzled the icing on top. I behaved and didn't have one until I finished my breakfast.

Oh drink choices which to choose? There was only one glass worth of chocolate milk and Mango Tangerine juice. There was one more drink choice not shown and I'm not talking about water.

Here you go my plate and my drink choices. Did you really think coffee wouldn't make a Christmas visit? haha. I don't know why exactly but I dished me a pretty small slice of egg casserole. No worries I had seconds and it may have been quite a bit bigger.

I was happy with my time in the kitchen. The only thing I dread was not having some fresh green onions, green peppers, and red peppers. Just for your information if you do sausage or ham with this recipe you will need about 2 pounds. One could also add more veggies and make this a vegetarian meal 😊 I hope you enjoyed my time summarizing this breakfast I prepared.

Well after breakfast I cleaned up the kitchen, did the dishes, and took a shower. It may be surprising to know I don't have a dish washer. I am among a minority in America to not have one. Anyways I spent sometime watching football after getting out the shower.

Yesterday I was happy that my team the Miami Dolphins squeaked one out against the Dallas Cowboys. Today it was nice to see the underdog win on the road. I totally was not expecting the Las Vegas Raiders to pull one out against the home team, Kansas City Chiefs. Another playoff bound team losing helps my team 😊

Well it stopped snowing but I guess we're suppose to get more before tomorrow's end. I'm just happy we got some and it's not a brown looking Christmas here. Seeing bare trees with no leaves is sort of depressing to me. Even with the little bit of snow some trees such as this one has snow covered branches. I see the tree as not being so naked now. I don't usually wish for tons of snow but just a little more would be fine with me. Don't get me wrong I think it is magically we got snow finally on Christmas day, I'm thankful for that.

Fresh new snow can be used in detective work. Who was in my back yard and made these prints? Was it one of Santa's astray reindeers? Oh no, it's no other than Watson my English Bulldog, hehe.

The snow scored on the basketball hoop. It even decided to leave proof by hanging out on the net 😉 The snow accumulated a little bit since this morning and proof is on my car as it has more snow on it. I'm not going anywhere today so no big deal. If I was it would just be a few wipes with the broom side of the ice scraper. Maybe some ice scraping as well as it rained a lot before it started snowing.

Speaking of basketball my son and I watched the Los Angelos Lakers and Boston Celtics game together. I'm not a fan of either but my son is a huge Lakers fan or should I say Lebron James fan. They lost a back and forth entertaining game.

Today was a great Christmas day. It started off with seeing snow fall. So it was a white Christmas after all. Than a breakfast that I made that everyone enjoyed. Some sports watching which were entertaining games to watch and not to mention good family bonding. Most of the day involved being indoors but I rather enjoyed it. Throughout the day my phone did blow up with calls and texts from family and friends. In the end, while staying at home this year it still had the same Christmas feel.
