They basically list every collection, whereas other sites tend to have a more curated, shortened list. You can look for big outliers by scanning the 24 hour and 7 day price movements. The volume is then cross-referenced. A 300 percent increase for a collection with only five buyers is far less impressive than a 30 percent increase for something like Crypto Punks. The seven day is especially useful if the project didn't just launch, as it indicates that some major catalyst occurred.

Maybe a big celebrity bought a specific NFT, or maybe there was just a big game update. This will be your first cue to dig deeper. The one limitation of the Opensea rankings is that they will only include collections that are available on their platform, so you may not find something like NBA Top Shot. A couple of things I like about this site are their rankings, which include things like market cap, and the fact that you can filter by rarity and quickly see floor prices for different trades within each collection page.

Then there's the option of a celebrity. You can do this by determining which wallets various celebrities or influencers own and then using their purchases as signals for new projects.
