FOLLOW ME TO NSUKA LAND AND LEARN A SPECIAL WAY OF PREPARING YAM AND BEANS. (AYARAYA)

Hello friends and happy Sunday.

This Sunday is a special one because I am going to take you guys to my village. Hahaha 😄. Yes, we are moving straight to Nsuka land in Igbo land of Nigeria. Since I came to this land by marriage, i noticed something very special about these set of people. What is it? They can produce or make different food from the ordinary yam that I know. Not just yam. If you give an Nsuka woman rice to make food with it, you will be shocked how she will use that rice to prepare up to five different meals that will amaze you. Let me not dwell there much today, because if I start we can stay a whole day talking about the special abilities of the Nsuka people in preparing different food. We will leave that for another day. But for today, let's move on to business.

I learnt how to prepare yam and beans in a special way and I want to teach you guys. This one don't take time, so don't be scared. Hahaha 😄. It won't be like Ukwa. This will just take like one hour and we re done. Let's move 🏃. The Nsuka people call it 'AYARAYA' Ayaraya is made with just beans and yam with the addition of ingredients.

INGREDIENTS NEEDED 👇

Yam


Just two tubers for that quantity of beans

Beans

Maggi


Just five cubs of maggi will be enough.

Salt

Red oil

Onions

Pepper

Step two: PREPARATION PROCESS

👉 After washing the beans, boil it for fourty minutes

👉 Pill off the back of the yam and boil till it becomes soft


You can decide to boil the yam together with the beans. But you must watch it to make sure it didn't become too soft.

👉 Pound tha yam to get to this level. Remember, it is not pounded yam oh! Just a little pounding.

👉 Get a bigger pot that will accommodate the yam and the beans. Start frying the onions, pepper, maggi, and also add salt while frying.

👉 This particular food don't need water please. You just add a little of the water removed from the cooked beans to it.

👉 Allow it to boil for another two minutes and bring it down.


At this point, your sauce is ready.

👉 Add the yam and beans together in the sauce. Keep turning it together until they all mix very well.


I decided to reduce the sauce so as to add it from the top.


After turning it very well, this is going to be your end result.
