Baingan is an all season vegetable, available through out the year. It is easy to cook, nutritious and tastes yummy. There are so many dishes one can make with baingan, I love it the masaledar baingan that my mom makes for me. I’m going to share the same recipe with you.

Ingredients:
• 250 gms Baingan
• ½ TBSP Red Chilli Powder
• ½ TBSP Coriander Powder
• ½ TBSP Amchoor Powder
• ½ TBSP Turmeric Powder
• ½ TBSP Garam Masala
• Salt as per taste
• Oil for cooking
Step 1: Wash and dry the baingan well. Make sure there is no more moisture in it.
Step 2: Take each baingan, cut the body into 2 equal halves. Do this for all the pieces.
Step 3: Now take all the spices in a bowl and mix them well. Fill each baingan piece with the spice mix prepared.
Step 3: Take oil in a pan and heat it. Now add the filled baingans to the oil and let them cook on low flame.
Step 4: Once the baingans change their color to slight brown, cover them.
Step 5: Once the baingan gets cooked, empty the pan in a bowl. Serve hot with chapatis/paranthas.
