Oh, we're all a mess. That's part of the fun of creation.
The reds might have something to do with the phone's sensor. I take it you're shooting in .jpg? You could have more control over your images if you shot in RAW- but just go with what feels right to you. One isn't really "better" than the other these days.
Either way, you've got a good eye, which is more than most can say. If you're looking to learn more about the fundamentals of photography, I wrote a half-decent tutorial when this platform was still STEEM. I broke it up into the three main parts of exposure: aperture, shutter speed, and film/sensor sensitivity.
That said, there are plenty of tutorials out there that can teach you about the exposure triangle, but that knowledge isn't required to take good photos (as you well know.)
