Hi everyone, I hope you're doing well! This is my entry for ecoTrain Medicinal Cooking Competition Week 4. The theme of this week is to cook the healthiest dish so it doesn't take me a second to come with this delicious chicken soup with mushroom as the best choice I could think about.
Chicken soup with mushrooms is a very healthy food and one of the best things about it is that it has so many different varieties so there's something for everyone. The ingredients are easy to find and the soup is only mildly time consuming. It also provides good sources of protein, carbohydrates, vitamins, and minerals. This dish is perfect for anybody who wants to be conscious about their health but still enjoy their favorite comfort food!
The ingredients I used for this dish include:
- Chicken
- Dried shiitake mushroom
- Sweet corn and green peas
- Onion
- Cornstarch flour
- Egg
- Salt & pepper

First of all, boil the chicken with a little salt and onion. When the chicken is cooked, take it out and let it cool. When the chicken has cooled, shred the chicken.
At the same time soak the dried mushrooms in hot water. When the mushrooms have expanded, wash them with water, squeeze them to drain, and then cut them into small pieces.
Rinse corn and green peas with water.
Bring the chicken broth back to a boil, then add mushrooms, shredded chicken, corn and beans and cook for another 15 minutes, seasoning to taste.
Mix the cornstarch with cold water, then slowly pour the cornstarch mixture into the boiling soup, stirring well. When the soup starts to thicken, slowly pour 1 beaten egg into the soup.
Ladle the soup into a bowl and add ground pepper to serve.
This dish not only tastes good but it also has many health benefits. This is a nutritious and quite light dish that can be used for breakfast or added to meals. This dish is especially suitable for eating in the winter.
