Southern Nigeria Dish | Edikaikong Vegetable Made With Water Leaf and Ugu (Fluted Pumpkin)

Edikaikong soup is a vegetable soup made with a plentiful amount of fresh leafy vegetables, dried fish, and assorted meat. It is one of the most nutritious Nigerian soup recipes.

It's generally one of the native soups of Nigeria's south-southern regions (Cross River and Akwa Ibom states)

Due to the overall diversity of rich proteins utilized in the soup's preparation, Edikang Ikong was once known as "the soup of the wealthy," but today, anybody can enjoy this delectable soup.

This soup is commonly made with a combination of two vegetables: Ugwu leaves (fluted pumpkin) and water leaves; the combination of these two vegetables gives Edikang Ikong its distinct flavor. The ingredients are inexpensive and readily available in any Nigerian market.

The Ingredients


  • Assorted Meat

  • Water Leaf

  • Ugu

  • Stock Fish

  • Pomo

  • Crayfish

  • Palm Oil

  • Red Pepper

  • Salt and Seasoning to taste

Now let begin

Step 1: Boil your meat for 3 minutes, then add the Red Pepper, Dried and Stock fish and Palm oil and allow it to cook for another 3 minutes.

Step 2: Add the Water leaves, then allow it to cook for a minute before adding the crayfish, salt and seasoning to taste.. then finally add the Ugu (fluted pumpkin) cover and allow it to cook very well.
