Cooking: a return to normalcy

Many many things of late have not gone well for me, depression is a bitch and don't let anyone tell you otherwise.
ALSO, do not let anyone tell you "oh just get over it, you can move past it" because that just ain't true.
We ain't talking about being sad, being depressed and overwhelmed is a totally different "animule"
Give yourself some time, talk to someone, get help if you can.

All that being said

I started off the day working on the caulk in my bathroom, I hope to get the paint done tomorrow

So, I decided to splurge and cook a feast for myself.
Round 1: the steak

It's been in my fridge for over a week, I got it to cook for my out of town guests, but they didn't seem to want to eat anything I cooked, so we ate out. Their loss.

Dried with a cloth towel, then heavily salted and peppered, it is now resting, while I prepared the other items

I rubbed this large Russet tater with butter

Then into the air fryer. It has cooked, and is now resting, but I will give it a final round before I eat it.
I found a method of cooking a steak that I really like:

What you see above is the residue (kept in the fridge) of the herbs, oil and butter I used on the last steak, plus I've added some FRESH Lemon Oregano that survived the winter.

I also added some more garlic and parsley (that will also be in my salad) which will include

As a side dish, I'm making creamed corn (from frozen)

So the steak is cooked in a black iron skillet, with a small amount of oil at high heat, to get a good seared crust

Once the crust is achieved (keep in mind it will be basically raw inside at this point)
You add the butter and herbs, then baste the meat with that mixture.

As an after thought, I called my niece (whose husband was buried one week ago today) to come over and share this feast with me, but she can't get here for another ½hr, so I'ma gonna eat now

She did come over and gratefully ate some meat and potato, taking some of both and the salad home with her.
