Stir-fry bitter melon with salted fish

Hello everyone, it's been a long time since I've seen my fellow foodies, I apologize in advance because I've been busy preparing for moving house for a month and now it's just finished. In my new kitchen I share recipes for the first time with foodie friends. Today I made Stir-fried Bitter melon.

Do you know bitter melon? Does anyone eat bitter melon at your place? Bitter melon is a vegetable that has a characteristic bitter taste. We usually cook it in stir-fry or make siomay with the addition of fish.

Many people don't like bitter melon because it is bitter, but we can reduce the bitter taste by squeezing the cut bitter melon with a sprinkle of salt, kneading it until the bitter melon is limp, let it sit for a few minutes and rinse with clean water before cooking.

This time I made stir-fried bitter melon, my favorite menu, I added salted fish and stir-fried it with chilies and onions, let's just check the complete recipe.


Material :


3 pieces of medium sized bitter melon, approximately 200-250 grams
50 grams of salted fish
2 bay leaves
1 thumb crushed galangal
50 grams of chili
12 grams of shallots
3 cloves of garlic
1 tsp salt
1/2 tsp msg
1 tsp chicken stock
1 tsp brown sugar


How to make :


• first split the bitter melon then remove the bitter melon seeds, after that slice the bitter melon into smaller sizes.


• Sprinkle bitter melon with approximately 1 tablespoon salt. Then squeeze the bitter gourd with your hands until soft and set aside. Don't forget that before cooking, you have to wash it thoroughly to remove the salt content.


• Wash and clean the salted fish, chilies, shallots and garlic and slice all the spices.


• fry the salted fish until golden brown.


• add chilies, shallots, garlic, bay leaves and crushed galangal, stir-fry until fragrant.


• add bitter melon that has been washed clean and add seasoning salt, brown sugar, MSG, chicken stock powder, add a little water and cook until cooked and wilted.


• Don't forget to adjust the taste if it suits your taste. Turn off the heat. Stir-fried bitter melon is ready to serve.
