For the past couple of months, I have been regularly making some mayonnaise and thought I could share the process with you all.
Ingredients:
- Oil
- Mustard (1 tbsp)
- Salt (a pinch or to your preference)
- Pepper (to your preference)
- Vinegar (2 tsp)
- Egg Yolk (1)
- Garlic (1 pressed or minced clove - optional)
Tools required:
- 1 big bowl
- 1 whisk (manual or electric)
I didn't put the quantity of oil because I keep adding some until the volume of mayonnaise is enough to fill my container.
Start by putting the mustard, the egg yolk and about 3 tbsp of oil in the bowl and blend it all together with your whisk.
Once it is homogeneous start pouring the oil very slowly, a few drops at a time while constantly whisking.
When the mixture starts to thicken a little bit, you can stop and add the salt and pepper.
Resume pouring the oil a little bit quicker now at a steady stream and keep whisking. Once you obtained the desired volume, you can add the vinegar which will add flavor and stabilize the mixture. You may also add the garlic at this time. Blend it well.
Transfer the mayonnaise to a container and put it in the fridge. It is best to leave it to cool down for a couple of hours before consuming it.
You can now pair it with different kind of dishes. My favorite is usually with a cold salad.
