Lately I have really liked the texture of corn cookies and my little brother also loves them, so today I will be showing you how I made these cookies filled with a dulce de leche-type cream that I made.
With just a few ingredients we can make some delicious cookies and fillings. If you like corn flour cookies, you will like this recipe. We will only be using cornstarch and two egg whites to make it without butter or oil. How about that, friends? So let's go through the ingredients.

Okay friends, as a first step we're going to be placing water to boil in a saucepan or pot over low heat to make a bain-marie, while it boils we're going to separate the egg whites from the yolks and place them in a bowl, we also pour the sugar right there in the bowl and stir, when the water is boiling we'll beat the egg whites on top of the pot in a bain-marie, we do this carefully friends since we can burn ourselves, the idea is to make a Swiss meringue, for this we need the sugar to melt along with our egg whites, we stir a little until they're hot and the sugar has dissolved.

After it is hot, remove it from the heat and add the egg white and sugar in another larger bowl to be able to beat well since beating this will increase in size, then with a whisk since I do not have a mixer, what we will do is beat until the meringue has a homogeneous and firm consistency for 10 minutes we beat this, then add the flour and cornstarch and little by little we will stir the mixture to remove the air from it.

We proceed to add the teaspoon of salt to our mixture and just a little bit of the strawberry essence. The idea is to paint our mixture pink like that shade that macaroons have 🤭 After beating evenly for five minutes, I am going to grease and flour the tray that we will use to bake the cookies, then there I will be adding the mixture with the help of a spoon, forming small balls and flattening them. In total, there are 7 cookies that I will bake for 12 minutes at 180°.

To make the dulce de leche type cream, what I will do is pour the water into the pot, add the milk, sugar, vanilla essence and beat with a whisk, here we will bring the milk to a low heat and beat and beat until it thickens since it can burn and this is easy to burn very quickly so bring it to medium heat and stir for 30 minutes until it thickens, we will notice that it is ready when our mixture separates from the bottom of the pot and has a creamy texture, remove from the heat and let cool.

When my cookies are cold as well as the cream, it's time to fill them. This is very easy to do. I take a cookie, place it upside down, add the cream and place a cookie on top, making the shape of a macaroon. We do this with all of them or we simply add cream individually, as you prefer, friends.
