Lentil & Brown Rice Pomegranate Jewels Salad

I've not popped into the Natural Medicine Community for such a long time that it almost feels like I need to introduce myself all over again, but I do believe some of my old friends here will remember me; grrrreat to join in again!
Seriously, I've really missed everyone and all the exciting things happening here, but life here in Hive is so full of exciting stuff that one can get quite lost and miss out on fabulous challenges like the current Plant Power Cooking Challenge | Week #2 | Come Join Us!!

We're given a couple of ingredients to work with each week and for my first contribution here, I've chosen Lentils and Pomegranates.
I will make a really scrumptious Lentil & Brown Rice Jewel Salad, delicious wrapped up inside Garlic & Spring Onion Naan.

So, the days of Vegan/ Plantbased food being boring are long gone; in fact when I look at food prepared by some of our Hive Top Plantbased Chefs I see the most amazing mouthwatering dishes bursting with flavour, and full of health giving goodness too!

Lentils are one of my absolute favourite legumes, so versatile as one can use it to make curries, mock meatballs, plantbased moussaka, soups and even salads, plus it is delicious and full of nutrition as well!

Pomegranates contain arils which look like shimmering jewels, almost too beautiful to eat, but this fruit is bursting with flavour and health giving antioxidants plus Vitamin C, excellent for fighting those nasty viruses.

Lentil & Brown Rice Jewel Salad
  • 1 cup brown Lentils, cook till just tender
  • 1 cup Brown Rice with sun-dried Tomatoes, cook as usual
  • 1 Onion, diced
  • 3 cloves Garlic, crushed
  • 1 Piece Ginger, grated
  • 2 tsp Cumin seeds
  • 2 tsp Garam Masala
  • 1/2 tsp Turmeric
  • Handful Golden Raisins
  • 3 small Tomatoes, diced
  • 1/4 Cucumber. diced
  • 1 Lemon, grate rind and squeeze juice
  • 1-2 Spring Onions, diced
  • 1/2 Pomegranate Seeds

Sautee Onions, Cumin seeds, Garlic & Ginger in a little oil.
Add Garam Masala & Turmeric plus Lentils, Rice & Golden Raisins, simmer for a couple of minutes, cool a little.
Add Spring Onions, Tomatoes, Cucumber, Lemon Rind & Juice & toss salad.
Top with extra Spring Onions and Pomegranate Arils and enjoy the flavour explosion when biting into those little jewels.

Enjoy on its own or wrapped up inside Garlic & Spring Onion Naan.

Naan without yeast
  • 1 cup Self-Raising Flour
  • 1/4 tsp Salt
  • Approx 2/3 cup boiling Water
    Mix to a soft dough, divide into 6 pieces, roll into balls.
    Roll into a super thin circle, brush one side with melted Vegan Butter with crushed Garlic & diced Spring Onion added.
    Place buttered side first onto a hot griddle, brush the other side with same, turn when it bubbles & starts to brown underneath.
