Rainbow Cassava Ball for Plantbased Snack

As usual, this time I want to share the recipe as #plantbase cooking challenged by @justinparke every week.
This time I want to share recipes of dishes made from cassava that is easy to get in Indonesia.

Cassava what we know is very easy though to be food, high carbohydrate as one of the staple food in Indonesia.

In the era of a pandemic, we need food that is rich in nutrients especially help keep the endurance of the body. Cassava has a high content of vitamin c and beta-carotene that can maintain the immunity of the body.

On this occasion, I want to share food made from cassava called ‘Rainbow Cassava Ball’

The ingredients are quite easily obtained, because the food is very simple but has a very delicious taste.

Ingredients used:

  • 500gr Cassava
  • 150gr and 50gr grated Coconut
  • 100gr Sugar
  • Pinch of salt
  • Plant based Food coloring
  • Water
  • Agar-agar
  • Pandan leaves

How to cook:

  • Peeled and finely grated cassava and squeeze the water.

  • Mix all the ingredients: cassava, coconut, sugar, gelatin and salt. Stir until blended.

  • After stirring batter, divide into 3 sections of dough and give food coloring.

  • Preheat the steamer which was already filled with water, and then stacking pandan leaves in the steamer so that cassava has the aroma of pandan wangi.

  • Steam for 15 minutes in medium-high heat, then remove from heat and set aside.
  • Steam 50gr grated coconut then give a little salt and mix well
  • Mix the cassava ball with grated coconut already on steam.

  • Rainbow Cassava Ball ready to serve.

The food is well suited to be a variant snack at home, safe for the family and for sure #plantbased and #vegan
In addition to its good taste, this food has a color favored children.
