I am 41 years old, thanks to God I reach this age. I am a sickly child before and until now. That is why I am so very careful in my food intake. I am also working in the mountain with fresh air.
I want to share with you this sustainable recipe I am always cooking once a week.
Eggplant with Eggs
- eggplant
- eggs
- spring onions
- salt
- black pepper
- oil for frying
Procedure
Clean the eggplant.
- Sliced it, so the egg batter could absorb inside easily.
- Beat the eggs with spring onions, salt, and black pepper.
*'Get ready and prepare the heated pan and oil for deep frying.
- Be careful in flipping to avoid breaking and separate the eggs and eggplant. Wait until the color will become golden brown.
- Set aside and remove oil residue, arrange it perfectly and serve!
The finished product. It is so delicious. I love this, one of my pandemic sustainable recipes.
I also want to share with you that planting eggplant in the backyard is too easy to grow. Let us be wise to our livelihood, how to live with contentment using our natural resources. I taught all my students the basic fundamental of life.
