Melt in your mouth Pork Tenderloin...

I have officially found the most delicious and simple pork fillet recipe on planet earth! I have made it twice now and it has been just out of this world amazing on both occasions... so much so that even my little man has climbed into seconds both times. The creamy mash and bok Choi were also the perfect accompaniments.

You simply roll the fillet in some salt and pepper and then sear it in a pan with a little olive oil. Remove it and then place it in some open foil. Top it with a mix of herbs, Garlic and a few sticks of butter, close it up and cook it for 25 minutes at 175 degrees Celsius. The seasoning consists of: one teaspoon of each of the following: garlic, thyme, sweet basil, oregano, parsley. Once cooked, let it rest for 5 minutes before serving, which is just enough time to prepare the bok Choi which you literally just boil for one minute in water. You can slice a little bit of the base off if you want but I know some people prefer not to.

I have found that with sweet potato mash it is best to strain it after cooking and then leave it to cool completely before adding the butter, cream and seasoning. I then use a hand blender to get it to a nice smooth consistency and have found that doing it this way gives you a much firmer result, closer resembling traditional mash.
