Noodles can be a symbol of blessing, gratitude, and long life for Asian people. That's why I made a special recipe about vegan noodles to celebrate my 70th reputation at Steemit.

It's really not an easy struggle to stay at Steem Blockchain among so many "dramas" :)

Noodles can be a portion of comfort food for many people with various cultures and ways of serving. It turns out that we can make our own noodles that are more guaranteed health because we can control the use of main ingredients without harmful chemicals.

The good news is we can make a variety of noodles with our favorite vegetables that have attractive colors.

Moringa Leaves

This time I will share with you the Moringa leaves noodle recipe. You can replace Moringa leaves with spinach or other green vegetables if you don't want to use Moringa leaves.

Look at these noodles. The color is very interesting and beautiful, right? And this noodle is made without eggs. Let's see how to make it.

Ingredients

  • 500 grams of all-purpose flour with high protein (if you don't have high protein flour, you can use medium protein flour. Use high protein flour to get a more rubbery noodle texture).
  • 200 ml - 250 ml of Moringa leaves juice (Use depending on the condition of the noodle dough)
  • All-purpose flour to sprinkle the dough so it does not stick during the process of forming into noodles

How to make

  • The first step, make moringa leaves into juice. Do the same steps if you use other vegetables. Make 250 ml of vegetable juice. Don't forget to filter the vegetable juice because we only need water from vegetables.

  • Prepare flour. Then start pouring vegetable juice little by little. Do it until a good mixture is formed.


  • It takes hand strength to make noodle dough to be good because the use of natural ingredients without eggs will require more effort to treat the dough.
  • If the mixture is already good, then cut the dough. Do not forget to sprinkle the mixture with flour so that the dough is not sticky.

  • Flat the dough into sheets to form into noodles.
  • Form the dough sheets into noodles. Here I use a noodle forming tool. But you can use scissors to form a long dough like noodles.

  • Noodles are ready to use. We can store it in the freezer for later use, or we can bake the noodles at a high temperature for later storage in the form of dry noodles.

For use in cooking, we can just dip the noodles in boiling water for about 3 minutes. Then soak the noodles in ice water so that the texture becomes good, chewy, and not sticky. Drain well.

This is a noodle that has been dipped in boiling water and has been soaked in ice water.

I usually serve noodles with stir-fry with simple spices and mixed with my favorite vegetables.
