For two portions you will need:
Tortillas (you can buy them in every grocery store)
Beef (500 gr)
Sweet peppers (1 Red, 1 Green)
Onion
Tomatoes
Wine Vinegar (you can also use regular vinegar)
Salt
Black Ground Pepper
Lemon
Garlic (3 cloves)
Olive Oil
Parsley
Laurel bay-leaf
Guacamole
Sour Cream
Chili pepper (if you want. I don’t use. In some groceries you may find spices specially for fajitas, I cook with it, it helps to avoid adding chili pepper.)
Preparation
1 Step.
Cut the meat in long thin slices, put in a bowl. Grate 3 cloves of garlic, mix it with olive oil and squeezed lemon juice in a cup and smear the meat with it. Salt and pepper your meat according to you taste, wrap the bowl and leave for couple of hours for marinating.
2 Step.
Thinly slice half of a big onion.
3 Step.
Slice both of sweet peppers in thin pieces too.
4 Step.
Put in a bowl onion and peppers all together, add wine vinegar. Leave for half an hour.
5 Step.
Cut tomatoes into small diced cubes.
6 Step
Cut the parsley.
Coking
7 Step.
Warm the skillet, add a little bit of olive oil, put meat there and fry for approximately 5-7 minutes until it will be done.
8 Step.
Add tomatoes and laurel bay-leaf to the skillet with a meat, reduce the fire and continue cooking on a low heat. Put the lid and leave it for stewing. At this step you can also add chili pepper if you like.
9 Step.
Take a big skillet, heat it, then add very little amount of olive oil and fry sweet peppers together with an onion until the gold crust.
10 Step.
Combine these two skillets in one, add parsley, any other spices you like and leave for stewing for about 15 minutes.
11 Step.
Your Fajitas is ready! Serve it with guacamole, sour cream, tortillas and enjoy!
