Dry-mix-veg

Dry-mix-veg is very famous vegetarian dish among main Indian foods. You can make dry-mix-veg, by combing 4-6 any vegetable of your choice. Here I am using Potatoes, Cauliflower , Carrot, Cabbage and Sweet Green pepper. This mix veg is so simple to cook and is tastes very delicious. I learnt this recipe from my friend Surbhi.

Ingredients:

2 cups finely sliced cabbage

1/2 green pepper thinly sliced

1 medium potato thinly sliced

2 cup cauliflower cut in small flowers

1 small carrot cut in 1-1/2 inch slices

1/2 teaspoon Amchoor powder/ Mango Powder

1/2 teaspoon red chili powder

1/2 teaspoon cumin seeds

1/8 teaspoon Asafoetida

1 teaspoon coriander powder

1/4 teaspoon home made Garam Masala

salt to your taste

1/3 cup oil

1 table spoon kasoori Methi

Method:

To make this delicious Mix Veg, heat 1/3 cup of oil in any frying pan or in a Iron kadhai. Next add cumin seeds, kasoori Methi and Asafoetida, fry for 10 seconds.
Add potatoes and fry for 30 seconds and next add turmeric powder, cauliflower and fry for a minute.
Next add green pepper and fry for 30 seconds. Now add all the the other remaining vegetables and fry for 5 minutes. Now add coriander powder, red chili powder, Garam masala, and salt. Mix very well and fry for 2 minutes. Now cover and cook for 10 minutes on low heat.
Give it a nice stir, add Mango/Amchoor Powder . Mix well then cover and cook for another 5 minutes. Remove the cover and cook without cover for 2 minutes then remove from the heat.
Transfer the mix veg in a Serving Bowl. Sprinkle chopped coriander leafs and serve hot.
Mouthwatering Mix Veg is ready to serve with Plan Roti Paratha or Zeera rice.
