Lentil croquettes
These small croquettes of simple preparation and delicious taste, are really nutritious.
They are also ideal for making paspalos or arranging them in meetings of friends because they are simple and delicious.
Ingredients
1 cup of lentils
1 bay leaf
1 thick chopped medium onion
1 clove of garlic, mashed
1 small garlic sliced ​​thin
1 small grated carrot
1 cup fresh grated bread
2 egg yolks
2 tablespoons chopped coriander
2-3 tablespoons of oil
Bread to serve
Tomato to serve
Preparation
Place the lentils and laurel in a bowl, add water and cook until the lentils are tender. Drain well and discard the bay leaf
Apart from a kitchen assistant, chopped or blender, chop half of the lentils, onion and garlic until a fine consistency paste is obtained.
Pass the mixture to a bowl and add the rest of the lentils, garlic, carrot, bread crumbs, egg yolks and cilantro. Mix well and season with ground pepper.
Make small croquettes with this mixture.
Heat a little oil in a non-stick pan and fry the croquettes until they are brown on both sides, drain them on absorbent paper.
Serve hot with tomato on top and arranged on toast. You can also serve them with Arabic chickpea cream and pita bread.croquetas de lentejas.jpg
