Some people wanted to know what side dish we were making for out holiday get together so I thought I would share what we put together as a good option for a salad that doesn't get mushy after sitting out for a while.
I present you with Holiday Cabbage Slaw
Dressing:
1/3 cup vegetable oil
1/4 cup apple cider vinegar
4 tablespoons maple syrup
4 teaspoons stone ground dijon mustard
1/2 teaspoon kosher salt
1 medium red onion, chopped finely
Mix your ingredients in a bowl, then chop your onion and add it to the dressing, let sit for a while (at least 10 mins) so the onion flavor mixes into the dressing
Salad:
1 head of cabbage, shredded
12 oz dried cranberries
Salt and pepper to taste
Sliced Almonds added on top
Mix your salad altogether and then add the dressing. It stays very crunchy for a few hours after mixed together to present a nice crunchy salad. Enjoy!
