Pakbet or Pinakbet is a popular vegetable dish in the Philippines. It is tasty vegetable dish made-up of different fresh vegetables.
Fried fish is often added for flavor to Pakbet but most of the time pork is usually add to pakbet. Instead of pork I used fried fish to have a variety.
Pakbet dish is really healthy because it was a combination of different vegetables cook together to form a dish. Nutritious food that was very affordable yet delicous.
INGREDIENTS FOR PAKBET
6pcs. fried fish
2 medium-length eggplants, cubed
few slices of ampalaya
4 tender okra pods
1 garlic clove, minced
1/2 cup of sliced onions
1 cup water from rinsing rice
1/4 of whole squash,sliced
1 tbsp pounded ginger
6 string beans,sliced
2 tbsp cooking oil
1 tsp. salt
HOW TO PREPARE PAKBET
In a pan,put cooking oil and add the garlic and onions stir it
Add the squash,string beans and ampalaya and the stir-fried garlic and onion
then add the eggplant and okra
add fried fish and salt, stir it
Cover the pan and cook over high heat, then turn down the heat to prevent scorching

Transfer it in a deep bowl
