How to make a healthy awesome raw vegan chocolate cheese cake

Recipe 1: raw vegan coconut chocolate cheese cake

 no dairy
 no gluten
 no heating
Just pure, healthy and good for you.

17 cm spring form pan, generously oiled with coconut oil, springform2.jpg

Crust: (all ingredients to grind in a food processor)
 1.5 cups walnuts ( mix of other nuts will be okay too)
 3 to 5 dates
 pinch of salt
 press in the bottom of the spring form pan

White filling:
 2 cups of fresh or ready to go coconut meat (for example deep frozen)
 1/3 cup coconut butter (not to mix up with coconut oil!!!)
 1/3 cup maple syrup or coconut syrup (or sweetener of choice)
 1 to 2 teaspoons of liquid vanilla extract ( bourbon) or some vanilla-powder
 Blend till smooth and fill half of it in the spring form pan
 Keep the other half for the decoration
 Set aside in the fridge to chill for 15 minutes then continue with the chocolate filling

Chocolate filling:
 1.5 cup coconut meat
 1 cup unsoaked cashew nuts
 1 to 1.25 cup cacao powder
 ½ cup coconut water or water
 1 cup maple syrup or coconut syrup
 1 to 2 tablespoon liquid coconut oil
 1 tablespoon liquid vanilla extract ( bourbon) or some vanilla-powder
 Blend till smooth and fill it in the spring form pan

 Set aside in the fridge to chill for 15 minutes then continue with the decoration
 Put the other half of the white filling into a decorator for garnishing and decorating
 Squeeze on top and put in fridge, consume within a week or freeze it

Variation: crust, then chocolate filling and white filling on top
