My favorite Chinese food hands down is Dou-Hua which is basically tofu, but not the kind of tofu which is commonly found in the West..or the East for that matter!

我最喜欢的中国菜就是重庆的豆花！豆花跟西方的豆腐完全不一样！
I lived in Chongqing, which is technically the largest city in the world with about 28.5 MILLION people, for about 1.5 years. While there I fell in love with this delicacy. Chongqing food is also Sichuan food basically as Chongqing was once a part of Sichuan province, it is now it's own city/province.
我以前住在重庆差不多一年半。重庆是世界上最大的城市，有差不多 28,500,000人口。重庆菜和四川菜是差不多的因为以前重庆是跟四川一起的。
The Dou-Hua in Chongqing is different from that in Fujian province I have found out, which is where I am now. The Dou-Hua in Fujian is sweet and of a different texture, it is totally different from the Dou-Hua I love in Chongqing actually. I dearly miss Chongqing Dou-Hua! :(
重庆的豆花跟福建的豆花完全不一样。福建的是软软的甜的，重庆的没有味道。豆花的酱是我最喜欢的酱在中国，里面有盐，油，辣椒酱。
You usually have it along with rice, and some spicy sauce. The sauce is made up of salt, hot pepper sauce and a bit of hot pepper oil, it is my favorite sauce in all of China, easily!
If you ever get a chance to go to China, please check out Sichuan and Chongqing, you will NOT be disappointed with the food there!
