SPICY POTATO WRAPS

Ingredients
Oil
4 cooked potatoes thickly sliced
5-10 ml Cajun or mix of 5ml coriander and 2ml cumin and
2-3ml Cayenne pepper
5ml Cumin seeds
20ml Sesame seeds
half an Onion chopped
half Avo roughly chopped
1 Tomato finely chopped
Salt and Pepper
Lemon juice
4 toritllas

Heat the oil in the pan Roll the potatoes in the spices and seeds and stir-fry in oil until crisp on the outside. Spread mayonaise over Torteillas
Mix the onion avo and tomato. Season with salt pepper and lemon juice. Divide among the tortillas, spoon the salad on top and roll up. Serve with sour cream or mayonnaise, sweet chilli sauce and fresh coriander. Serves 4
