Definitely!
First parboil your washed rice and keep it aside.
Wash and Dice some tomatoes enough for your Jellof rice, put it in a pot and boil it till the tomato juice dries up.
Once it dries, in the same pot add in your pepper mixture(grounded fresh peppers and onions) and grounded crayfish with a pinch of salt and let it boil for 4 minutes.
Then add in your vegetable oil (About one cup depending on the quantity of rice you aim for).
Leave it to simmer for about 10 minutes then add in seasoning cubes, any spice of your choice and salt and stir at intervals.
The mixture should be paste like by now and the oil would be bubbling at the top. If it’s not so, leave it to boil for an extra 6 minutes.
Then you add in your meat/vegetable stock with a cup of water and let it boil together for another 10 minutes.
Taste the mixture for spice and if it’s not enough, add in little salt. (The tip is to go in with as little spices as you can).
Once that is done, you can now add your parboiled rice you set aside and stir till it’s covered in the mixture.
Seal the pot with cooking aluminum foil then cover it tight shut.
Leave to boil for about 10 minutes before checking in for softness.
Garnish with your proteins and you’ve successfully made my sisters recipe of Nigerian Jellof rice!
I hope that helped 💕
