I think there is a difference between the order itself, and the perception of order. The disorder itself does not exist for me, it exists only as perception, we perceive the disorder as observers, although what we see has an order that we don't understand. Maybe the ink example shows a new order instead of a disorder. It only looks like disorder in the view of the observer, who seeks to find the old order in turn without success.
Also, as far as I could understand, I agree with you at the end.
