Instructions
1- Marinate and Dry Brine:
- Pat the duck dry. Generously season the entire duck with salt and pepper, ensuring even coverage.
- Place the duck in an oval, stainless steel roasting pan with a lid, cover, and refrigerate for 12 hours to allow the flavors to meld and the skin to dry out.
2- Initial Slow Roasting:
- Preheat your oven to 120°C.
- Roast the duck in the covered pan for 6 hours. This slow cooking method ensures the meat becomes incredibly tender.
3- Crisp Finish:
- After 6 hours, raise the oven temperature to 180°C.
- Uncover the duck and roast for another 20-30 minutes until the skin turns golden brown and crispy.
4- Prepare the Sauce:
- Collect the pan juices from the roasting pan into a small, stainless steel saucepan.
- Using the AEG induction cooktop, bring the collected drippings to a simmer.
- Add the charred 1/2 onion, 25 g of fresh ginger, and 4-star anise pods to the simmering juices.
- Pour in 120 ml of Madeira, Sherry, or Cognac, then add 400 ml of poultry broth and 2 tablespoons of honey.
- Allow the sauce to simmer for 10 minutes, reducing slightly and thickening.
