Sindhi Biryani
Sindhi Biryani is a vibrant and aromatic rice dish that hails from the Sindh region of Pakistan. Known for its rich and spicy flavors, this biryani combines tender chicken, earthy potatoes, tangy yogurt, and a medley of exotic spices, all layered with fragrant Basmati rice. The dish is traditionally finished with a technique called "dum," where the biryani is steamed to perfection, allowing the flavors to meld beautifully.
Ingredients
🍗 0.5 kg Chicken cut into pieces
🧅 2 large Onions thinly sliced
🥄 1 cup Yogurt Dahi
🥄 1 tablespoon Ginger Paste
🥄 1 tablespoon Garlic Paste
🥔 2 medium Potatoes half-boiled and halved
🧂 1 tablespoon Salt for chicken curry
🧂 2 tablespoons Salt for boiling rice
🍅 5 large Tomatoes sliced into wedges
🌿 1 teaspoon Turmeric Powder Haldi
🌶️ 1 tablespoon Red Chili Powder Lal Mirch Powder
🌶️ 12 small Green Chilies Hari Mirch, sliced lengthwise
🌿 4 pieces Black Cardamom Badi Elaichi
🌿 6 pieces Cloves Laung
🌿 1 teaspoon Cumin Seeds Kala Zeera
🌿 12 pieces Black Peppercorns Kali Mirch
🌿 4 pieces Green Cardamom Hari Elaichi
🌿 3 pieces Star Anise Badhian ke Phool
🥭 6 pieces Dried Plums Aloo Bukhara
🌿 1 teaspoon Nutmeg & Mace Powder Jaifal Javitri ka Powder
🌈 0.5 teaspoon Food Color orange
🌸 0.5 teaspoon Biryani Essence
🧈 1 cup Ghee/Oil
🌿 0.5 bunch Mint Leaves Pudina, chopped
🌿 0.5 bunch Coriander Leaves Dhaniya, chopped
🍋 4 pieces Lemons sliced into rounds
🍚 3 cups Basmati Rice soaked for 1 hour
Instructions
1- Prepare Rice:
- Wash and soak Basmati rice in water for 1 hour.
2- Fry Onions:
- Heat ghee/oil in a large pot.
- Fry sliced onions until golden brown. Reserve a portion for garnish.
3- Sauté Aromatics:
- Add ginger and garlic paste to the pot with remaining onions.
- Sauté for a minute.
4- Cook Chicken:
- Add chicken pieces and fry until lightly browned.
5- Add Whole Spices:
- Include black cardamom, cloves, cumin seeds, black peppercorns, green cardamom, and star anise.
- Mix well.
6- Add Ground Spices:
- Stir in salt, turmeric, and red chili powder.
- Coat the chicken evenly.
7- Add Potatoes & Yogurt:
- Incorporate half-boiled potatoes and yogurt.
- Mix gently.
8- Simmer Chicken Curry:
- Add water, cover, and simmer for 10 minutes.
9- Boil Rice:
- In another pan, boil water and add salt.
- Cook the rice until 70-80% done, then drain.
10- Prepare Garnishes:
- Slice tomatoes, lemons, green chilies, and finely chop mint and coriander.
11- Assemble Layers:
- Add dried plums, tomatoes, lemons, mint, and coriander over the chicken curry.
- Do not stir.
12- Simmer Curry Further:
- Allow the curry mixture with added garnishes to boil for 2-3 minutes.
13- Layer Rice:
- Spread drained rice over the curry in the pot.
14- Add Color & Essence:
- Mix food color with biryani essence and drizzle over the rice.
15- Garnish & Finish:
- Sprinkle fried onions and nutmeg & mace powder over the top.
16- Steaming (Dum):
- Cover the pot tightly, cook on high flame for 5 minutes, then lower and steam for 10 minutes.
17- Serve:
- Gently mix and serve.
- Garnish with lemon slices and tomato wedges.
