Barabo Mas Huni: A Traditional Maldivian Breakfast Delight
Barabo Mas Huni is a simple yet flavorful Maldivian breakfast dish that combines the creaminess of cooked pumpkin with the richness of tuna and the freshness of coconut. This traditional salad, packed with flavors from curry leaves, chili, and lime, offers a taste of the Maldives in every bite. It's perfect for a morning meal or a light main course.
Ingredients
๐ 2 cups pumpkin, peeled and cubed, dark green variety
๐ง 1 cup water
๐ฅฅ 3/4 cup fresh coconut, grated
๐ง
1 medium onion, finely chopped
๐ฟ 12 curry leaves, finely sliced
๐ถ๏ธ 1/2 Scotch bonnet chili, chopped
๐ Juice from 1/2 lime
๐ง 3/4 teaspoon salt
๐ 1/2 cup Maldive fish, sliced, smoked tuna
๐ 1 can 150-180g canned tuna, drained, no brand specified
๐ง 1/2 clove garlic, grated or finely chopped, optional
Instructions
1- Cook the Pumpkin:
- Peel 1/4 medium-sized dark green pumpkin, remove the seeds, and cut into small cubes.
- Place the pumpkin cubes in a non-stick wok or pan with 1 cup of water.
- Cover with a glass lid and cook over medium heat on a gas stove until tender (about 10-15 minutes).
- Check the tenderness with a fork. Drain any excess water if necessary.
2- Prepare Other Ingredients:
- Grate the coconut using a traditional manual grater.
- Use a Kiwi Brand knife on a wooden cutting board to finely chop one medium onion, slice curry leaves, and chop the Scotch bonnet chili.
- Slice smoked tuna and drain canned tuna using the integrated can opener lid.
- Optional: Grate or chop 1/2 clove of garlic with a stainless steel grater.
3- Combine Ingredients:
- In a large mixing bowl, combine onion, curry leaves, and chili.
- Add lime juice, salt, and mix well while wearing gloves, using hands to crush ingredients to release flavors.
- Add smoked tuna and mix thoroughly.
- Add canned tuna and continue mixing until well combined.
- If using garlic, add and mix.
- Add grated coconut and mix everything into a uniform base.
4- Finish the Barabo Mas Huni:
- Add cooked pumpkin to the tuna mixture, using hands to mash the pumpkin until incorporated.
- Adjust seasoning with salt, lime, or chili to taste.
5- Serve:
- Shape the Barabo Mas Huni using a small plastic container if desired, and place on a white ceramic serving plate.
- Serve with freshly cooked roti on the side.
