Ingredients

🐟 1.75 lbs Arctic Char Fillet, skin-on
🫒 2 tablespoons Extra Virgin Olive Oil, for griddle
🧂 Sprinkle of Kosher Salt
🌶️ Sprinkle of Black Pepper

🍑 2 Fresh Peaches, diced
🌶️ 1 Red Pepper, diced
🥒 2 Baby Cucumbers, diced
🧅 1 Red Onion, diced
🌶️ 1 Jalapeño, diced, seeds removed
🌿 Bunch of Cilantro, chopped
🍋 Juice of 1 Lime


Instructions

1- Prepare Your Arctic Char:

  • Place the Arctic Char fillet on a metal serving platter.
  • Lightly drizzle olive oil over the fish, rubbing it onto the flesh.
  • Season generously with Kosher salt and black pepper.

2- Set Up and Preheat Your Grill:

  • Insert a flat griddle directly onto the grill grates of your Weber gas grill.
  • Ignite the left-side burner beneath the griddle and close the lid.
  • Preheat to 500°F. This will take about 15 minutes.

3- Prepare the Fresh Peach Salsa:

  • In a clear glass mixing bowl, combine the diced peaches, red pepper, baby cucumbers, red onion, jalapeño, and cilantro.
  • Squeeze the juice of one lime over the mixture.
  • Thoroughly mix with spoons until well combined.

4- Sear the Arctic Char:

  • Once the grill reaches 500°F, drizzle olive oil onto the hot griddle.
  • Place the Arctic Char fillet on the griddle, skin side down.
  • Close the grill lid immediately and set a timer for 5 minutes. Do not open the lid during this time.

5- Transfer and Serve:

  • After 5 minutes, open the grill lid and carefully remove the fillet using metal tongs and a spatula.
  • Transfer the fillet to a serving platter, displaying the crispy skin.
  • Garnish with freshly chopped herbs and lemon wedges.
  • Serve with generous spoonfuls of peach salsa on the fish and optionally on the side.
